When most people think of Spain’s best cocktail scenes, Madrid and Barcelona are first to come to mind, but El Niño Perdido has proved a notable exception to the rule since opening in Valladolid – in the heart of the famous Ribera del Duero denomination of origin for wine – in 2011. Juan Valls, who also runs Spanish bar show FIBAR, launched the programme in a historic 1800s-era building with the goal of showcasing drinks that take inspiration from fresh, seasonal produce. To keep things exciting for the locals and foreign visitors, avant-garde techniques are used behind the scenes but cocktails are presented in a simple but memorable way. The cellar-like space, with exposed brick columns and old tile floors, has become a treasured local hangout for this reason.
